Ingredients

  • Sea bass
  • Olive Oil
  • Kosher Salt
  • Pepper
  • Orange
  • Tarragon
  • Parsley
  • Cherry Vinegar
  • Dijon Mustard

Preparing the fish:

  1. Take a whole sea bass and brush it with olive oil.
  2. Sprinkle kosher salt and pepper
  3. Stuff the fish with the following:
    • A slice of orange
    • Tarragon
    • Parsley
  4. Place evenly on a hot grill. Flip once.

Preparing the Vinaigrette

  1. Chopped tarragon
  2. Cherry Vinegar (Aged)
  3. Extra Virgin Olive Oil
  4. Dijon Mustard
  5. Salt and Pepper
  6. Whisk together and taste.
  7. Pour over the fish while it is hot and serve.
