Procedure:
- Lay out one nori sheet.
- Slice an avocado and lay out the slices on one side of the sheet. Leave one inch along the side and a little bit of space above and below.
- Slice a tomato and lay it over the layer of avocado slices.
- Make long slices of a scallion and lay it over the tomatoes.
- Sprinkle a few olives over the scallions.
- Spread some arugula and alfalfa on top.
- Add a leaf of lettuce over the top.
- Roll, slice and enjoy.
